sticky buns with brown sugar frangipane



Have you ever wanted to bake something badly and the key ingredient of the recipe was not in your pantry? This happened to me at the begining of the year, when I was absolutely determined to have some buns for our family breakfast on the first day of the year, but found out there was no yeast among my provisions. I don´t know if it came from my mother´s saying "where there is a will there is a way" or simply my sheer stubborness, but I managed to bake some cinnamon raisin lemony frangipane sticky buns, which, though delicious, were kind of cake-like.

¿Alguna vez han deseado mucho cocinar algo y no tenían el ingrediente clave de la receta  en su despensa? Esto me sucedió a principios de año, cuando estaba absolutamente decidida a hacer unos buns para el desayuno familiar en el primer día del año, pero me di cuenta de que no había levadura entre mis provisiones. No sé si fue por la frase de mi madre "donde hay una voluntad hay un camino" o, simplemente, por pura terquedad, pero me las arreglé para hornear unos sticky buns de canela y pasas con frangipane al limón, que, aunque deliciosos, eran más tipo torta.


I learned my lesson well. There are some ingredients, such as dry yeast, I should never have missing among my goodies. It lasts for a long time (always check the "best before") and is absolutely handy for many recipes, such as pizza or quick breads. As you may surely guess, after this episode I went to the market and literally stacked my pantry with several packages. 

Aprendí la lección bien. Hay algunos ingredientes, como la levadura seca, que nunca deben faltar entre mis provisiones. Dura mucho tiempo (chequeen siempre el "consumir antes de") y es absolutamente útil para muchas recetas, como la pizza o los panes. Como pueden seguramente adivinar, después de este episodio me fui al mercado y, literalmente, llené mi despensa con varios paquetes.



I therefore have ready for this week-end some traditional sticky buns at last! I filled them with brown sugar frangipane (recipe below) and skipped the cinnamon because my son does not like its flavour. This time we ( that is, his sister, I just followed orders while cooking - remember they are teenagers?) made the exception because we really want to share a family treat together!

Por lo tanto, tengo listo para este fin de semana unos sticky buns tradicionales, finalmente! Los rellené con frangipane de azúcar negra (receta a continuación) y no les puse canela porque a mi hijo no le gusta su sabor. Esta vez nosotros (es decir, su hermana, yo sólo seguí las órdenes mientras cocinaba - recuerdan que son adolescentes?) hicimos la excepción porque tenemos muchas ganas de compartir un banquete familiar juntos!

RECIPE/ RECETA
Makes 14 buns / Para 14

Ingredients
For the dough:
3/4 cup warm milk
1/2 cup unsalted butter, melted
1/2 cup granulated sugar
1 large egg, beaten
1/2 tsp salt
1tsp vanilla extract
2 1/2 tsp  granulated dry yeast
3 cups all-purpose flour (plus 1/2 cup to work the dough)

For the frangipane:
1 cup almond meal
1/2 cup icing sugar
1/2 cup brown sugar
1 egg white
50 g unsalted butter, melted

For the glaze:
2 tbsp lemon juice
icing sugar

Ingredientes
Para la masa:
3/4 taza de leche tibia
1/2 taza de manteca derretida
1/2 taza de azúcar
1 huevo grande, batido
1/2 cucharadita de té de sal
1 cucharadita de té de extracto de vainilla
2 1/2 cucharadita de té de levadura seca granulada
3 tazas de harina común "0000" (más 1/2 taza para trabajar la masa)

Para el frangipane:
1 taza de harina de almendras
1/2 taza de azúcar impalpable
1/2 taza de azúcar negra
1 clara de huevo
50g de manteca, derretida

Para el glaseado:
2 cucharadas soperas de jugo de limón
azúcar impalpable, cantidad necesaria




















Instructions
  1. In a large bowl combine the warm milk, melted butter and granulated sugar. Stir in the yeast and let it sit until it is foamy, about 10 minutes. Stir in the beaten egg, the salt and vanilla extract and mix
  2. Add the flour to the wet mixture and work till you obtain a sticky dough but not to the fingers. Add the 1/2 cup flour to knead the dough over a floured working surface for about 5 minutes. Allow to prove for 2 hours in a warm place
  3. For the frangipane combine the almond meal with the icing sugar and brown sugar, add the melted butter and stir. Add the egg white and mix until you obtain a creamy paste. Refrigerate until you need to use it
  4. Work the dough on a floured working surface with a rolling pin into a rectangle 1/4" inch tall
  5. Spread the frangipane over the surface 
  6. Roll the rectangle up lengthwise into a long jellyroll. Slice it into 1 1/2" inch pieces 
  7. Preheat the oven to 180º C / 350º F
  8. Prepare two 9" inch round baking tins with vegetable oil spray. Place the rolls in each tin with a space between them (about 7 rolls per tin) and bake for 30 minutes or until golden brown
  9. For the glaze mix the lemon juice with enough icing sugar as to reach the right consistency for a drizzle
  10. Allow to cool completely and drizzle with abundant glaze

Instrucciones

  1. En un bols grande combinar la leche tibia, la manteca derretida y el azúcar. Incorporar la levadura y dejar reposar hasta que esté espumosa, aproximadamente 10 minutos. Añadir el huevo batido, la sal y el extracto de vainilla y mezclar
  2. Añadir la harina a la mezcla húmeda y trabajar formando una masa pegajosa pero que no se adhiera a los dedos. Ir añadiendo la 1/2 taza más de harina para poder amasar la preparación por 5 minutos sobre una superficie enharinada. Dejar que leude durante 2 horas en un lugar tibio
  3. Para el frangipane mezclar la harina de almendras con el azúcar impalpable y el azúcar negra. Añadir la manteca derretida y mezclar. Añadir la clara de huevo y batir la preparación hasta obtener una pasta cremosa. Reservar en la heladera hasta el momento de usar
  4. Sobre una superficie enharinada estirar la masa con palote hasta formar un rectángulo de 0.6 cm (1/4") de espesor
  5. Esparcir el frangipane sobre la superficie de la masa
  6. Enrollar la masa desde el lado largo del rectángulo y cortar en porciones de aproximadamente 3.5 a 4 cm  (11/2")
  7. Precalentar el horno a 180º C / 350 º F
  8. Preparar dos moldes redondos de 23 cm de diámetro con aceite vegetal. Acomodar cada rollo en los moldes (aproximadamente 7 por molde) y hornear por 30 minutos o hasta que estén dorados
  9. Para el glaseado mezclar el jugo de limón con la cantidad necesaria de azúcar impalpable hasta llegar a una consistencia deseada
  10. Dejar enfriar por completo y glasear abundantemente

  1. Those buns are perfection, they look just gorgeous. I really love the frangipane filling, it's a great idea. Cinnamon or that type of warm yeast roll is one of my favorite indulgences.

  2. I always have dry yeast in my pantry since I bake many breads throughout the week. These buns look so good. I would definitely add the cinnamon since, unlike your son, I love this stuff so much!

    1. Me too, Katerina, I love cinnamon! We made the exception this time so that he would try them, and the brown sugar frangipane did the trick with its taste.

  3. Yo tengo un frasco de levadura en polvo en la heladera siempre. Me dan ganas de hacer pan en los momentos más insólitos... Que bien haber hecho estos rolls con el calor que está haciendo! Y con frangipane, que es uno de mis rellenos favoritos para todo! Muy buenos Viviana!

    1. Si, la verdad que por estos días yo también cocino a horas insólitas, bien temprano a la mañana cuando se puede prender el horno! Y opté por la levadura seca (que en general tengo, pero la verdad que este principio de año me agarró desprevenida!) porque no tengo que pensar que a la semana se me va a vencer como pasa con la fresca.
