basic chocolate loaf


We shared a lot of chocolate recipes this week. I have saved a few myself and expect to try them soon. I don´t know about yourselves, but it is never enough for me when it comes to chocolate. And I find there is always something new to learn about it. I´ve been reading a lot of what experts have to say about it. 

Compartimos un montón de recetas de chocolate esta semana. Guardé algunas y espero probarlas pronto. Yo no sé si para ustedes, pero para mí nunca es suficiente cuando se trata de chocolate. Y me parece que siempre hay algo nuevo para aprender de él. He estado leyendo mucho sobre lo que los expertos en el tema tienen que decir al respecto.

I normally add chocolate to my preparations, the very dark kind, and seldom use only cocoa powder. Probably it is because I think it will not taste enough of chocolate! Though I have tried it in the great recipe I used for my chocolate dessert cake with hazelnut brittle and it was really awesome. I think the secret lies in using always good quality cocoa powder. But what does this exactly mean?


Normalmente agrego chocolate a mis preparaciones, el verdaderamente oscuro, y rara vez uso sólo cacao en polvo. Probablemente porque creo que no va a saber bastante a chocolate! Aunque lo probé en la gran receta que utilicé para mi torta de chocolate con crocante de avellanas y fue realmente espectacular. Creo que el secreto está en usar siempre cacao en polvo de buena calidad. Pero ¿qué significa esto exactamente?


Apparently the difference between good quality cocoa powder and any other is the percentage of fat per serving. According to experts you should find 1 gram of fat every 5 to 6 grams serving. The regular cocoa has only half the fat, which would be around 24% for good quality stuff. This is the key to enhanced flavour.  I´ll be checking labels as from now!

Al parecer, la diferencia entre el polvo de cacao de buena calidad y cualquier otro es el porcentaje de grasa por porción. Según los expertos debería tener 1 gramo de grasa cada 5 a 6 gramos de porción. El cacao común tiene sólo la mitad de esa grasa, que estaría alrededor de 24% para la materia de buena calidad. Esta es la clave para un mejor sabor. Voy a estar chequeando etiquetas a partir de ahora!



basic chocolate loaf (budín de chocolate básico)



RECIPE / RECETA
Makes 1 4" x 10"inch loaf / Para 1 budín de 10 x 25 cm

Ingredients
11/2 cup self raising flour
1/2 tsp baking powder
1/3 cup good quality cocoa powder
1/2 cup sugar
1/4 cup light brown sugar
1/2 cup milk
1/2 cup double cream
2 eggs
1 tsp vanilla extract
Cocoa powder for dusting

Ingredientes
11/2 taza de harina leudante
1/2 cucharadita de té de polvo de hornear
1/3 taza de cacao en polvo de buena calidad
1/2 taza de azúcar
1/4 taza de azúcar rubia
1/2 taza de leche
1/2 taza de crema doble
2 huevos
1 cucharadita de té de extracto de vainilla
Cacao en polvo para espolvorear




Instructions

  1. Preheat oven to 160 º C / 325 ° F. Grease and line a 2 1/2 " deep, 4" x 10" inch (base) loaf  baking tin. Allow the lining to hang over 1" on the long sides of the tin
  2. Sift flour into a large bowl. Add the baking powder and cocoa powder.  Stir to combine
  3. In another bowl beat the sugars with the eggs until pale and fluffy, add the vanilla extract. Whisk the double cream into the mixture
  4. Fold the dry ingredients into the batter, alternate with the milk until they are well combined. Pour into the prepared tin. 
  5. Bake for 1 hour or until a skewer inserted in the centre comes out clean. Allow to stand for 10 minutes and unmold on a rack to cool
  6. Dust some cocoa powder before serving

Instrucciones
  1. Precalentar el horno a 160 º C / 325 ° F. Enmantecar y forrar un molde de 6.5 cm de profundidad y 10 cm x 25 cm  de base. Permitir que el papel manteca cuelgue 2 cm en los lados largos del molde
  2. Tamizar la harina en un bols grande. Agregar el polvo de hornear y el cacao en polvo y combinar
  3. En otro bols batir los azúcares con los huevos hasta que estén pálidos y esponjosos, añadir el extracto de vainilla. Incorporar la crema doble y mezclar
  4. Añadir los ingredientes secos a la mezcla, alternando con la leche hasta obtener una preparación uniforme. Verter en el molde preparado
  5. Hornear durante 1 hora o hasta que un palillo insertado en el centro salga limpio. Dejar reposar durante 10 minutos y desmoldar sobre una rejilla para enfriar
  6. Espolvorear con un poco de cacao en polvo antes de servir

  2. Hola Viviana, que aspecto tan jugoso tiene tu pastel de chocolate, te ha quedado realmente muy tentador.
    Yo uso siempre cacao para este tipo de pastel, pero efectivamente, compro siempre del de mejor calidad y desde luego compensa.

  3. Such a beautiful chocolate loaf Viviana! Everyone should have one of these in their baking repertoire! You are right, the quality of the cocoa powder is so important. I always buy the Valhorona one online, a little indulgent but it's worth every penny!
