There are a few things I enjoy the most during late summer. One of them is baking with seasonal fruits that are at hand, because you really don´t know if you will find them so good again. I thought it was perfect to use some amazing plums I had bought, before I turned every single one of them into jam for the incoming colder seasons.

Una de ellas es hornear con frutas de temporada de las que hay a mano, porque realmente no sabemos si las vamos a encontrar tan buenas de nuevo. Pensé que era perfecto usar unas ciruelas increíbles que había comprado, antes de convertir cada una de ellas en mermelada para las estaciones entrantes más frías.


This plum crumble cake has been in my plans for the summer for a time now. I had saved the recipe and was waiting for the right occasion and a glorious day. The weather has been very whimsical all along the season but apparently we have been favoured with two delightful weekends on a row! So I seized the moment and as soon as these beauties arrived yesterday afternoon, I knew it was the time to let them show their full flavour.

Esta torta de ciruelas con crumble ha estado en mis planes para el verano desde hace un tiempo. Había guardado la receta y estaba esperando la ocasión justa. El clima estuvo muy caprichoso a lo largo de la temporada, pero aparentemente hemos sido favorecidos con dos fines de semana seguidos espectaculares!  Así que aproveché el momento, y tan pronto como estas bellezas llegaron ayer por la tarde, supe que era el tiempo para que mostraran todo su sabor.







The plums for this cake have been hand picked by some local producers who grow organic vegetables and fruits in the area. This summer we have been purchasing all sorts of amazing veggies and fruits, together with my neighbour, from this small organic place and they even bring it to our homes. Every Friday afternoon we place our order and enjoy its arrival the following day. Lately it is very difficult to find reliable products in the market, or rather find them at all! I hope to keep this practice during the year because it has been a change for good and price wise, unbelievable as it may be in our current chaotic economical situation, it is cheaper than in the market.

Las ciruelas para esta torta fueron recogidas a mano por algunos productores locales que cultivan verduras orgánicas y frutas en la zona. Este verano hemos estado comprando todo tipo de verduras y frutas increíbles, junto con mi vecina, a este pequeño lugar orgánico que incluso nos trae las cosas a nuestras casas. Todos los viernes por la tarde hacemos el pedido y disfrutamos de su llegada al día siguiente. Últimamente es muy difícil encontrar productos de confianza en el mercado, o más bien encontrarlos del todo! Espero seguir esta práctica durante el año, ya que ha sido un cambio para bien y con respecto a los precios, aunque parezca increíble en la actualmente caótica situación económica, son más baratos que en el mercado.











I cut the plums into wedges to prepare the fruit for the cake and simply added some granulated sugar, macerating them for about an hour.

Corté las ciruelas en trozos para preparar la fruta para la torta y simplemente les añadí un poco de azúcar granulada, macerándolas por aproximadamente una hora.

RECIPE / RECETA
Serves 8/ Porciones 8 

Ingredients
For the cake
1 cup self raising flour
1/2 tsp ground cinnamon
1/2 cup sugar
2 eggs
1/2 cup double cream
2 tbsp milk
1tsp vanilla extract
4 medium plums
1 tbsp granulated sugar

For the crumble
1/4 cup light brown sugar
2 tbsp granulated sugar
1/3 cup plain flour
1/2 tsp ground cinnamon
1oz /30g  unsalted butter, cold

Ingredientes 
Para la torta
1 taza de harina leudante
1/2 cucharadita de canela en polvo
1/2 taza de azúcar
2 huevos
1/2 taza de crema doble
2 cucharadas de leche
1 cucharadita de té extracto de vainilla
4 ciruelas medianas
1 cucharada sopera de azúcar

Para el crumble
1/4 taza de azúcar rubia
2 cucharadas soperas de azúcar
1/3 taza de harina común
1/2 cucharadita de canela en polvo
1 oz / 30 g de manteca fría



Instructions
  1. Rinse and dry the plums. Cut them in wedges and place them in a small bowl. Sprinkle the tablespoon of granulated sugar on top and macerate for about an hour 
  2. For the crumble: In a food processor pulse all the ingredients till you obtain a thick crumble. Refrigerate 
  3. Preheat the oven to 170º  C / 340º  F. Grease and line an 8" inch springform baking tin
  4. Sift the flour in a large bowl and combine with the cinnamon and sugar
  5. In a small bowl whisk the eggs with the cream, milk and vanilla extract
  6. Add the wet mixture to the dry ingredients and combine well
  7. Pour the batter into the prepared tin. Place the plum wedges on top decoratively. 
  8. Sprinkle the crumble evenly over the plums and bake for 40 to 45 minutes or until golden brown. A skewer should come out clean when inserted in the centre.
  9. Allow to cool for 10 minutes and unmold carefully
  10. It is best served warm with a dollop of whipped cream

Instrucciones
  1. Enjuagar y secar las ciruelas. Cortarlas en trozos y colocarlas en un recipiente pequeño. Espolvorear la cucharada de azúcar granulada por encima y macerar por espacio de una hora
  2. Para el crumble: En una procesadora de alimentos pulsar todos los ingredientes hasta obtener un crumble grueso. Refrigerar.
  3. Precalentar el horno a 170º C / 340º  F. Enmantecar y forrar un molde desmontable de 20 cm
  4. Tamizar la harina en un bols grande y mezclar con la canela y el azúcar 
  5. En un bols pequeño batir los huevos con la crema, la leche y el extracto de vainilla 
  6. Añadir la mezcla húmeda a los ingredientes secos e integrar
  7. Verter la mezcla en el molde preparado. Colocar los trozos de ciruela en la parte superior de forma decorativa. 
  8. Espolvorear el crumble de manera uniforme sobre las ciruelas y hornear durante 40 a 45 minutos o hasta que esté dorada. Un palillo debe salir limpio al insertarlo en el centro. 
  9. Dejar enfriar durante 10 minutos y desmoldar con cuidado 
  10. Es mejor servido tibio con una cucharada de crema batida
