peach ginger streusel loaf


I could have baked this peach ginger streusel loaf as a coffee cake if I had chosen. This recipe is so good I just turned it quickly into a loaf to enjoy with my cup of tea, but it is the perfect match for coffee, if that is what you love! A hot cappuccino maybe?

Podría haber horneado este budín de duraznos con streusel de jengibre como una torta para el café si hubiera querido. Esta receta es tan buena que la convertí rápidamente en un budín para disfrutar con mi taza de té, pero es el complemento perfecto para el café, si eso es lo que les gusta! ¿Un capuchino caliente, tal vez?













The days are getting cooler and though autumn is not yet showing, you can smell the change in the air. Whenever a season changes I get this urge of baking with whatever great fruit is left, such as I did with those gorgeous plums for my plum crumble cake. The peaches I got were awesome, probably not like those of Montreuil (a famous peach orchard in Paris), but I think that even Escoffier would have chosen them for his Melba dessert.

Los días están cada vez más frescos y aunque el otoño aún no aparece, se puede oler el cambio en el aire. Cada vez que cambia una estación tengo este impulso de hornear con cualquiera de las buenas frutas que quedan, tal como lo hice con esas magníficas ciruelas para mi torta de ciruela con crumble. Los duraznos que conseguí eran impresionantes, probablemente no como los de Montreuil (huerto de duraznos famoso de París), pero creo que incluso Escoffier los hubiera elegido para su copa Melba.




















And as autumn calls for other scents and smells, I joined this summer fruit to the flavour of spices such as ginger, that pairs so well, and perfumed the crunchy streusel with it. I added almond flakes, just because I cannot live without them, as you already know. But those are totally optional!

Y, como el otoño alude a otros aromas y olores, junté esta fruta de verano con el sabor de una especia como el jengibre, que le queda tan bien y perfumé con ella el streusel crujiente. Agregué almendras fileteadas, pero como ustedes ya saben, sólo porque no puedo vivir sin ellas. ¡Pero son totalmente opcionales!

RECIPE / RECETA
Makes 1 4" x 10"inch loaf / Para 1 budín de 10 x 25 cm 
(You can turn it into a cake with a 9"inch round baking tin/  Pueden convertirlo en una torta con un molde redondo de 23 cm de diámetro)

Ingredients
For the loaf
1 1/2 cup self raising flour, sifted
1/2 cup almond meal
1 tsp baking powder
3/4 cup granulated sugar
4 oz / 115g unsalted butter, room temperature
2 eggs
1/2 cup plain yoghurt ( buttermilk works well too)
1 tsp vanilla extract
2 peaches, peeled and cut in wedges

For the streusel
1/2 cup all purpose flour
1/3 cup light brown sugar
2 oz / 55g unsalted butter, melted and at room temperature
1 tsp ground ginger
1/2 tsp cinnamon (optional)

2 tbsp blanched almond flakes (optional)

Ingredientes 
Para el budín 
1 1/2 taza de harina leudante, tamizada 
1/2 taza de harina de almendras 
1 cucharadita de té de polvo de hornear 
3/4 taza de azúcar granulada 
115 g de manteca, a temperatura ambiente 
2 huevos 
1/2 taza de yogur natural  
1 cucharadita de té de extracto de vainilla 
2 duraznos, pelados y cortados en trozos 

Para el streusel 
1/2 taza de harina común
1/3 taza de azúcar rubia
55 g de manteca, derretida y a temperatura ambiente 
1 cucharadita de té de jengibre molido 
1/2 cucharadita de té de canela (opcional)

2 cucharadas de almendras blanqueadas fileteadas (opcional)











Instructions
  1. Preheat oven to 160 º C / 325 ° F. Grease and line a 2 1/2 " deep, 4" x 10" inch (base) loaf  baking tin. Allow the lining to hang over 1" on the long sides of the tin
  2. For the ginger streusel combine the flour, light brown sugar and spices in a bowl (cinnamon is optional) and stir in the melted unsalted butter, until crumbs are formed. Refrigerate.
  3. Sift the flour into a large bowl. Add the baking powder and almond meal.  Stir to combine
  4. In another bowl cream the sugar with the unsalted butter, add the eggs one by one and beat until pale and fluffy. Add the vanilla extract. 
  5. Fold the dry ingredients into the batter, alternate with the yoghurt until they are well combined. Pour into the prepared tin. 
  6. Place the peach wedges in the centre of the loaf and sprinkle the ginger streusel abundantly on top. As an option you can add the almond flakes to garnish
  7. Bake for 1 hour or until a skewer inserted in the centre comes out clean. Allow to stand for 10 minutes and unmold on a rack to cool

Instrucciones
  1. Precalentar el horno a 160 º C / 325 ° F. Enmantecar y forrar un molde de 6.5 cm de profundidad y 10 cm x 25 cm  de base. Permitir que el papel manteca cuelgue 2 cm en los lados largos del molde
  2. Para el streusel de jengibre combinar la harina, el azúcar rubia y las especias en un bols (la canela es opcional) y agregar la manteca derretida, hasta que se formen migas. Refrigerar.
  3. Tamizar la harina en un bols grande. Agregar el polvo de hornear y la harina de almendras y combinar
  4. En otro bols batir el azúcar con la manteca hasta obtener una crema, y añadir los huevos de a uno, batiendo hasta que estén pálidos y esponjosos. Añadir el extracto de vainilla.
  5. Añadir los ingredientes secos a la mezcla, alternando con el yoghurt hasta obtener una preparación uniforme. Verter en el molde preparado
  6. Colocar los trozos de durazno en el centro del budín y espolvorear el streusel de jengibre en abundancia en la parte superior. Como opción se puede añadir las almendras fileteadas para decorar
  7. Hornear durante 1 hora o hasta que un palillo insertado en el centro salga limpio. Dejar reposar durante 10 minutos y desmoldar sobre una rejilla para enfriar

  7. Si digo que este es mi estilo de torta, me quedo muuuy corta. Ojala la tuviera enfrente! Yo, no consegui ni un durazno decente en todo el verano, ni uno!
