white bread rolls


These are the typical white bread rolls I would buy in the bakery for a Sunday lunch. I decided it would be fun to try and bake them at home and we were not disappointed at all. Here we call them "mignon" ("small" in French), because they are sold in small pieces and the French influence in bread making is quite big.

Estos son los pancitos blancos típicos que compro en la panadería para una comida de domingo. Decidí que sería divertido probar y hornearlos en casa y no nos decepcionó en absoluto. Acá los llamamos "mignon" ("pequeño" en francés), porque se venden en pequeños trozos y la influencia francesa en la elaboración del pan es bastante grande.

























The size is important and also the shape. The crust is hard and inside, the crumb is fluffy and very white. It is ideal to eat with any dish that has a great sauce you will not want to spare, or to spread with soft, creamy butter. It is best to eat them just warm.

El tamaño también es importante y la forma. La corteza es dura y en el interior, la miga es esponjosa y muy blanca. Es ideal para comer con cualquier plato que tenga una gran salsa que no se querrían perder, o para untar con manteca cremosa y suave. Lo mejor es comerlos tibios.

white bread rolls ("mignoncitos")










RECIPE/ RECETA
Makes 12/ Para 12

Ingredients
12.5 oz strong bread flour
1 tsp fine salt
1 1/2 tbsp olive oil
10 fl oz warm water
1 1/2 tbsp active dry granulated yeast
1 tbsp sugar
plain flour to dust

Ingredientes 
350 g de harina común "000"
1 cucharadita de sal fina
1 1/2 cucharadas de aceite de oliva
300 ml de agua tibia
1 1/2 cucharadas de levadura seca granulada
1 cucharada de azúcar
harina común "0000" para espolvorear












Instructions
  1. In a large bowl combine the bread flour and salt, make a well in the middle
  2. In a jug pour the warm water and add the sugar. Stir in the yeast and let it sit until it is foamy, about 10 minutes.
  3. Add the olive oil in the well of the flour mix and pour the water with the foamy yeast. Work till you obtain a sticky dough but not to the fingers. Knead the dough over a floured working surface for about 10 minutes. Allow to prove for 2 hours in a warm place
  4. Degas the dough on a floured working surface and form 12 little balls with the dough. Place them on a floured baking sheet and allow to prove for 1 1/2 hours 
  5. Turn each little dough ball into a 4" x 2" rectangle and roll. Make a cut in the middle and place on a greased baking sheet. Dust the bread pieces with abundant plain flour. Allow to prove for another half an hour
  6. Preheat the oven to 200º C / 400º F and bake on the middle rack for 15 to 20 minutes or until the bread is slightly golden brown
  7. Allow to cool 10 minutes before serving

Instrucciones 
  1. En un bols grande, combinar la harina común "000" y la sal, hacer un hueco en el centro 
  2. En una jarra verter el agua tibia y añadir el azúcar. Añadir la levadura y dejar reposar hasta que esté espumosa, aproximadamente 10 minutos. 
  3. Añadir el aceite de oliva en el hueco de la mezcla de harina y verter el agua con la levadura espumosa. Trabajar hasta obtener una masa pegajosa, pero no a los dedos. Amasar sobre una superficie de trabajo enharinada durante unos 10 minutos. Permitir que leude durante 2 horas en un lugar cálido 
  4. Desgasificar la masa sobre una superficie enharinada y formar 12 bolitas con la masa. Colocar en una bandeja de horno enharinada y dejar que leude por 1 1/2 horas 
  5. Convertir cada pequeña bola de masa en un rectángulo de 10 cm x 5 cm y enrollar. Hacer un corte en la mitad y colocar en una bandeja de hornear enmantecada. Espolvorear las piezas de pan con abundante harina. Permitir que leude durante media hora más
  6. Precalentar el horno a 200º C / 400 º F y hornear en la rejilla del medio durante 15 a 20 minutos o hasta que el pan esté ligeramente dorado 
  7. Dejar enfriar 10 minutos antes de servir

  1. I love the rolls Viviana, whole wheat is great as are the who grains but there is nothing like a warm white roll with good butter, So delicious, your rolls have a lovely crispy crust too. You are an extraordinary baker.
