strawberry cream cheese cinnamon crumble rolls

This time of the year, with only one trimester of school left, a change of season and foreseeing all the rush of the "big holidays" ahead, (for some of you Thanksgiving and Hannukah, and most of us Christmas, New Year and the like!) I get a bit anxious and need to take one thing at a time. My children have a one week holiday on September and I usually plan the incoming season during that time because, without their school timetable, I happen to be more at home.

Esta época del año, con sólo un trimestre de escuela por delante, un cambio de estación y previendo todas las corridas de las "grandes fiestas" por delante, (para algunos de ustedes de Acción de Gracias y Hannukah, y la mayoría de nosotros Navidad, Año Nuevo y todo eso!) me pongo un poco ansiosa y necesito tomar una cosa a la vez. Mis hijos tienen una semana de vacaciones en Septiembre y  suelo planificar la temporada entrante durante ese tiempo, porque sin su horario escolar, estoy más en casa.

Breakfasts during our small break-time are more relaxed and sometimes the weather is so good we can even have it outside, enjoying the blooming garden. Though the new season is not here yet, there are some quite affordable and delicious strawberries in the market, which tempted me into baking these crazy good rolls. I had done some raspberry coconut mini scones last week with frozen berries, but these natural strawberries really flavoured our rolls in a special manner.

Los desayunos durante nuestro pequeño tiempo de descanso son más relajados y a veces el clima es tan bueno que incluso podemos tenerlos afuera, disfrutando del jardín floreciente. Aunque la nueva temporada aún no está aquí, hay algunas frutillas bastante económicas y deliciosas en el mercado, lo que me tentó a hornear estos increíbles rolls. Hice unos scones mini de frambuesa y coco la semana pasada con fruta congelada, pero estas frutillas naturales le dieron un sabor muy especial a nuestros rolls.


The combination with cream cheese spread instead of using butter, softened the tart flavour of the fruit and made them so rich, they almost tasted like a cheese Danish. The cinnamon crumble on top added crunchiness, that simply contrasted wonderfully with the soft dough. Whenever you have the time, you definitely should try these!

La combinación con queso crema en lugar de untarlos con manteca blanda, suavizó el sabor ácido de la fruta y los hizo tan ricos, que casi parecían unas "danesas" de queso. El crumble de canela en la parte superior les añadió un contraste crujiente, simplemente maravilloso contra la masa suave. Si tienen el tiempo, definitivamente deberían probarlos!

RECIPE/ RECETA
Makes 9  big rolls / Para 9 rolls grandes

Ingredients
For the dough:
3/4 cup warm milk
1/2 cup unsalted butter, melted
1/3 cup granulated sugar
1 large egg, beaten
1/2 tsp salt
1tsp vanilla extract
1 1/2 tsp  granulated dry yeast
3 cups all-purpose flour (plus 1/2 cup to work the dough)

For the filling:
Strawberry coulis:
1 cup chopped strawberries (natural or frozen)
2 tbsp sugar
1 tbsp water
1/2 tsp lemon juice

Cream cheese spread:
1 cup cream cheese, softened
2 tbsp granulated sugar
1 tsp vanilla extract

For the crumble:
1/4 cup light brown sugar
1 tsp ground cinnamon
1/4 cup plain flour
2 oz. / 60 g unsalted butter, melted

Ingredientes 
Para la masa:
3/4 taza de leche tibia
1/2 taza de manteca, derretida
1/3 taza de azúcar granulada
1 huevo grande, batido
1/2 cucharadita de sal
1 cucharadita de extracto de vainilla
1 1/2 cucharadita de levadura seca granulada
3 tazas de harina común "0000" (más 1/2 taza para trabajar la masa)

Para el relleno:
Coulis de frutilla:
1 taza de frutillas picadas (naturales o congeladas)
2 cucharadas de azúcar
1 cucharada de agua
1/2 cucharadita de jugo de limón

Crema de queso:
1 taza de queso crema, blando
2 cucharadas de azúcar granulada
1 cucharadita de extracto de vainilla

Para el crumble:
1/4 taza de azúcar rubia
1 cucharadita de canela molida
1/4 taza de harina común
2 oz / 60 g de manteca, derretida


Instructions
  1. In a large bowl combine the warm milk, melted butter and granulated sugar. Stir in the yeast and let it sit until it is foamy, about 10 minutes. Stir in the beaten egg, the salt and vanilla extract and mix
  2. Add the flour to the wet mixture and work till you obtain a sticky dough but not to the fingers. Add the 1/2 cup flour to knead the dough over a floured working surface for about 5 minutes. Allow to prove for 2 hours in a warm place
  3. For the filling: Strawberry coulis: In a small saucepan combine the chopped strawberries, water, lemon juice and sugar. Bring to a boil and when the fruit is tender process briefly. Allow to reduce stirring gently over a low fire. Refrigerate until you need to use it. Cream cheese spread: combine the softened cream cheese with the sugar and vanilla extract and mix. 
  4. Work the dough on a floured working surface with a rolling pin into a 12" x 16"rectangle, 1/2" inch tall
  5. Spread the cream cheese over the surface and the strawberry coulis over the cream.
  6. Roll the rectangle up lengthwise into a long jellyroll. Slice it into 1 1/2" inch pieces
  7. Prepare an 8" inch square baking tin with vegetable oil spray. Place the rolls in the tin with a space between them. 
  8. In a small bowl mix the flour, brown sugar, ground cinnamon and melted butter to form the crumble. Sprinkle the mixture over each roll. Allow to prove for 1 hour 
  9. Preheat the oven to 180º C / 350º F and bake for 30 minutes or until golden brown
  10. Allow to cool 
Instrucciones

  1. En un bols grande, combinar la leche tibia, la manteca derretida y el azúcar granulada. Añadir la levadura y dejar reposar hasta que esté espumosa, aproximadamente 10 minutos. Agregar el huevo batido, el extracto de vainilla y la sal y mezclar
  2. Añadir la harina a la mezcla húmeda y trabajar hasta obtener una masa pegajosa, pero no a los dedos. Añadir media taza de harina y amasar sobre una superficie de trabajo enharinada durante unos 5 minutos. Permitir que leude durante 2 horas en un lugar cálido
  3. Para el relleno: Coulis de frutilla: En una cacerola pequeña combinar las frutillas picadas, el agua, el jugo de limón y el azúcar. Llevar a ebullición y cuando la fruta esté blanda, procesar brevemente. Dejar reducir removiendo suavemente a fuego lento. Refrigerar hasta su uso. Crema de queso para untar: combinar el queso crema blando con el azúcar y el extracto de vainilla y mezclar.
  4. Trabajar la masa sobre una superficie enharinada con un rodillo formando un rectángulo de 30 cm x 40 cm de 1,25 cm de espesor
  5. Extender la crema de queso sobre la superficie y el coulis de frutilla sobre la crema.
  6. Enrollar el rectángulo a lo largo. Cortar en piezas de 4 cm.
  7. Preparar un molde cuadrado de 20 cm x 20 cm con aceite vegetal en aerosol. Colocar los rollos en el molde con un espacio entre ellos.
  8. En un bols pequeño mezclar la harina, el azúcar rubia, canela en polvo y la manteca derretida para formar el crumble. Espolvorear la mezcla sobre cada rollo. Permitir que leude durante 1 hora más
  9. Precalentar el horno a 180º C / 350 ° F y hornear por 30 minutos o hasta que estén dorados
  10. Dejar enfriar

  5. OMG, Viviana those are incredible. Love the strawberry and cream cheese, since no more strawberries will have to find another fruit unless I can use jam, what do you think?

  9. Una locura Vivi! Tremendos! Y con lo ricas que están las frutillas ultimamente. Siempre me hacés acordar a cosas que hace mil que no hago, como cinnamon rolls. Otras eran las épocas de mucho tiempo libre para estar en la cocina..
