classic lemon loaf with coconut glaze

There are not many secrets for a perfect classic lemon loaf. You need the right proportions between your basic ingredients and finding some flavourful lemons and that is about it. The problem is when you don´t find decent lemons. Around this time of the year they are not as good as they should be. So I decided a little lemon oil would make the difference and enhance the flavour.

No hay muchos secretos para un perfecto budín clásico de limón. Se necesitan las proporciones justas entre los ingredientes básicos y encontrar algunos limones con buen sabor y eso es casi todo. El problema es no encontrar limones decentes. Alrededor de esta época del año no son tan buenos como deberían ser. Así que decidí que un poco de extracto de limón haría la diferencia y realzaría el sabor.

To balance the tartness I always finish my loaf with a sweet glaze and sometimes I dust it with poppy seeds, but this time, after seeing this combination work successfully in other recipes, I thought it would be good to try with coconut.

Para cortar la acidez siempre lo termino con un glaseado dulce y a veces lo espolvoreo con semillas de amapolas, pero esta vez, después de ver esta combinación de manera exitosa en otras recetas, pensé que sería bueno probar con coco.



The sweet, sugary glaze trapped the coconut flakes and together provided the necessary crunch to  this lemon savoured, delicate and light loaf. The perfect excuse for some afternoon tea time on Labour´s Day!

El glaseado dulce y azucarado atrapó los copos de coco y juntos proporcionaron la cobertura crujiente necesaria para acompañar a este budín alimonado, delicado y ligero. La excusa perfecta para una tarde de té en el Día del Trabajo!

classic lemon loaf with coconut glaze (budín de limón clásico con glasé de coco)

RECIPE / RECETA
Makes 1 loaf / Para un budín

Ingredients
3/4 cup sugar
1/2 cup unsalted butter, soft
2 large eggs
1 lemon, juice and zest
1 1/2 tsp lemon oil
2 cups self raising flour
1 1/2 tsp baking powder
1/2 cup plain yoghurt

For the coconut glaze:
1/4 cup icing sugar 
2 tbsp coconut milk
1/2 tsp coconut oil
2 tbsp toasted coconut flakes

Ingredientes 
3/4 taza de azúcar 
1/2 taza de manteca, blanda
2 huevos grandes 
1 limón, el jugo y la ralladura 
1 1/2 cucharadita de extracto de limón 
2 tazas de harina leudante 
1 1/2 cucharadita de polvo de hornear 
1/2 taza de yogur natural 

Para el glaseado de coco: 
1/4 taza de azúcar impalpable
2 cucharadas de leche de coco
1/2 cucharadita de extracto de coco
2 cucharadas de coco rallado tostado



Instructions
  1. In a bowl beat the butter and sugar until creamy 
  2. Beat in the eggs one at a time and add the lemon zest and lemon juice until incorporated. Add the lemon oil
  3. In a separate bowl combine the self raising flour with the baking powder
  4. Add to the batter and mix
  5. Incorporate the plain yoghurt and fold into the batter
  6. Grease and line  a 4" x 10" inch, 2 1/2 " tall loaf tin and pour the batter
  7. Preheat the oven to 170 º  C / 340 º  F and bake for 45 to 50 minutes or until golden brown
  8. Allow to cool for 10 minutes and unmold
  9. Combine the icing sugar, the coconut milk and coconut oil to make the glaze. Drizzle on top of the loaf and sprinkle the coconut flakes. Allow to dry before serving
Instrucciones
  1. En un bols batir la manteca y el azúcar hasta que esté cremosa 
  2. Añadir los huevos uno a la vez y batir. Incorporar la ralladura de limón y el jugo de limón. Añadir el extracto de limón 
  3. En otro bols mezclar la harina leudante con el polvo de hornear 
  4. Añadir a la preparación y mezclar 
  5. Incorporar el yogur natural a la mezcla con movimientos envolventes
  6. Enmantecar y forrar una budinera de 10 cm x 25 cm, de 7 cm de alto
  7. Precalentar el horno a 170 º C / 340 º  F y hornear por 45 a 50 minutos o hasta que esté dorado 
  8. Dejar enfriar durante 10 minutos y desmoldar 
  9. Combinar el azúcar impalpable, la leche de coco y el extracto de coco para hacer el glaseado. Rociar cobre la parte superior del budín y espolvorear los copos de coco. Dejar que se seque antes de servir
