raspberry coconut mini scones

There are so many stories in fooodblogs about going around picking your own berries, I really got anxious for our Spring to come, and though the first delicious strawberries are appearing in the market, the season for berries has not yet arrived. Lately, if you don´t get your products from small local producers, which many people can´t afford or aren´t able to get, fruit in the common markets is absolutely tasteless.

Hay tantas historias en los foodblogs acerca de salir a juntar frutos rojos por ahí, que me dio ansiedad por que nuestra primavera llegue, y aunque las primeras deliciosas frutillas están apareciendo en el mercado, la temporada de frutos rojos todavía no ha llegado. Últimamente, si no se consiguen los productos de los pequeños productores locales, algo a lo que mucha gente no accede o no pueden conseguir, la fruta en los mercados comunes es totalmente sosa.



















I had bought two packages of frozen raspberries to make parfait, which comes out great, but I never get to post (at home they eat all of it before I can take a picture!), and saved about a cup to make a recipe inspired in some strawberry mini scones by Joy the Baker, a young and famous blogger, who has some outstanding recipes.

Había comprado dos paquetes de frambuesas congeladas para hacer parfait, algo que me sale bien pero nunca llego a postear (en casa se lo comen todo antes de que pueda sacar una foto!) y guardé aproximadamente una taza para hacer una receta inspirada en unos mini scones de frutilla por Joy the Baker, una blogera joven y famosa, que tiene algunas recetas excepcionales.

I thought coconut would be the perfect counterpart for raspberries in this recipe, balancing the taste of the fruit. I hope you think the same!

Pensé que el coco sería la contraparte perfecta para las frambuesas en esta receta, dándole equilibrio al sabor de las fruta. Espero que ustedes piensen lo mismo!


raspberry coconut mini scones (scones mini de frambuesa y coco)
RECIPE/ RECETA
Makes 18 scones/ Para 18 scones

Ingredients
2 cups self raising flour
1/2 tsp baking powder
1/2 cup shredded coconut 
3/4 cup frozen raspberries
2 tbsp granulated sugar
2 oz unsalted butter, cold and diced
1 egg plus 1 yolk, lightly beaten
3 tbsp simple cream
1/2 tsp vanilla extract
Extra cream to brush
1 tbsp light brown or turbinado sugar to garnish

Ingredientes 
2 tazas de harina leudante
1/2 cucharadita de té de polvo de hornear
1/2 taza de coco rallado
3/4 taza de frambuesas congeladas 
2 cucharadas de azúcar
2 oz. / 60 g de manteca, fría y cortada en cubos 
1 huevo más 1 yema de huevo, ligeramente batido 
3 cucharadas de crema simple
1/2 cucharadita de té de extracto de vainilla
Crema extra para pintar
1 cucharada de azúcar rubia o turbinado para decorar













Instructions

  1. Sift the flour and baking powder into a large bowl. Add the shredded coconut and sugar and stir
  2. Add the cold, diced unsalted butter and with the tip of your fingers work the ingredients to obtain a thick crumble
  3. Make a hole in the middle of the mixture and add the lightly beaten egg and yolk, the cream, the raspberries and vanilla extract. Combine the ingredients and turn the dough onto a lightly floured working surface
  4. Work the dough just enough to combine all the ingredients and roll into a rectangle 1" inch tall
  5. With the help of a round 2" inch pastry cutter cut the scones and place them on a greased and lined baking sheet, separated about 2"inches from each other
  6. Brush with extra cream and garnish with a sprinkle of light brown or turbinado sugar
  7. Preheat oven to 220º C / 430 º F and bake for 12 to 15 minutes or until the top is golden brown
  8. Allow to cool on a rack.  They are great halved and filled with whipped cream

Instrucciones 
  1. Tamizar la harina y el polvo de hornear en un bols grande. Añadir el coco rallado y el azúcar y mezclar 
  2. Agregar la manteca fría cortada en cubitos y con la punta de los dedos trabajar los ingredientes para obtener un crumble (migas) grueso
  3. Hacer un agujero en el centro de la mezcla y añadir el huevo y la yema ligeramente batidos, la crema, las frambuesas congeladas y el extracto de vainilla. Combinar los ingredientes y volcar la masa sobre una superficie de trabajo ligeramente enharinada 
  4. Trabajar la masa suficiente para combinar todos los ingredientes y con un rodillo aplanar en un rectángulo de 2,5 cm de altura
  5. Con la ayuda de un cortapastas redondo de 5 cm de diámetro cortar los scones y colocarlos en una bandeja para horno enmantecada y forrada con papel manteca, separados alrededor de 5 cm el uno del otro 
  6. Pintar con la crema extra y adornar con azúcar rubia o turbinado
  7. Precalentar el horno a 220 º C / 430 º F y hornear durante 12 a 15 minutos o hasta que la superficie esté dorada 
  8. Dejar enfriar sobre una rejilla. Son buenísimos cortados al medio y rellenos con crema batida

  2. Tengo que probar estos! joy the baker me encanta, sigue siendo una de las blogueras mas genuinas y buena onda. Que buena la epoca de frambuesas! Y con coco quedan barbaros los frutos rojos. Otra receta de scone para mi coleccion...

    1. Ella los hizo con frutillas y crema y yo me copé con unas frambuesas y se me ocurrió que el coco podría quedar bien...y quedó!!
